No Bake Cannabis Cookies – Chocolate Peanut Butter and Oats
Makes about 40 cookies (1/2 dose ea.)
- 2 cups sugar
- 4 tablespoons cocoa (I used medicated Hot Cocoa from the dispensary, which was right at 4 tbsp.)
- 1 stick 1/2 cup cannabutter
- 1/2 cup milk
- 1 cup peanut butter
- 1 teaspoon vanilla
- 3 to 4 cups oatmeal (You may start out with three, and add all or part of the last cup as needed for consistency. Don’t use quick oats)
- Waxed paper and some cookie sheets
Put dry oats in a large mixing bowl and set aside.
In a heavy 1 1/2 qt. saucepan, add peanut butter to cannabutter and melt.
As it begins to boil, stir in the sugar, cocoa, vanilla and milk. Mix well, turn down heat to a low boil and cook for about 1 minute.
When cooked and thoroughly mixed, add the liquid goodness into the oatmeal and stir until evenly distributed. If the mix is too soupy, (will not hold shape when you scoop out a spoonful), add more oats a half cup at a time until it feels right and holds shape.
On a cookie sheet lined with waxed paper, spoon-drop the cookie mix into little clumps and set in fridge or freezer until cooled and hardened. You may wrap them individually in foil and store in the freezer in a zip lock bag marked with exact contents.
You may make a batch of these for the kids by using regular butter and cocoa, but be sure to keep your medicated stash well hidden in the freezer and far away from the regular batch.
When using these cookies as a before bed time snack, you will probably experience a great night’s sleep. If these don’t come out as strong as you like, or they are too strong you can adjust your cannabutter recipe or you may add a meltable concentrate to the butter and peanut butter when meting the two, but really stir well.
